    Yes, Eden, they are easy to put together. And you can make the whipped avocado and the pancetta bits ahead of time to make them even faster. The polenta, however needs to be freshly baked to keep it from getting soggy on the bottom.

  3. This looks and sounds so delicious! I love the look of the polenta cups. I bet they’ll be great also with other stuffing, like cheese or some ragu.
